If you use the full secondary with a bridge rectifier, you will be limited to only half the rated max current but you probably knew that anyway. As you say, you won't be able to use the bias tap because the CT is no longer the common negative. To switch the HT, I think it would be best to connect the switch in the AC line, i.e. between the transformer secondary and the rectifier.
