Ebay auction listings show the shipping cost up front. If you think it's excessive the time to ask the seller about it or try to negotiate a better price or alternative shipping method is before you bid, not after you win the auction.
The seller probably thought you were trying to weasel out of the deal, which you legally committed to when you placed a bid, so they cancelled the sale because they just didn't want to deal with the hassle. I'm guessing that this doesn't actually violate eBay rules. I've seen, though not experienced, sales cancelled because the item was "lost" or "no longer available", which eBay allows as official reasons why a seller can back out, even after the auction has ended.
Automated "customer service" is a mess for sure though it's pretty much the norm these days. But I don't see how eBay has "shafted" you in any way. And shipping prices have increased dramatically over the years and continue to go up.
With any online purchase it's the total cost, including shipping, that matters not just the listed price of the item. Apparently, many bidders ignore this which is why some sellers list items somewhat deceptively. I've seen items listed for very low "Buy It Now" prices but the shipping price (shown in much smaller font) is extremely high. Obviously, they're hoping buyers don't notice the excessive shipping price and impulsively click the "Buy It Now" button.
