You CAN use one transformer for all four, but you should provide adjustable bias to each pair, or better, to each tube. The cathodes (heaters) are in parallel, so cathode voltage will be the same for all tubes. Nothing wrong with using one cathode resistor for most of the bias, and providing a few volts of adjustable bias for fine tuning. This is usually called "combination bias"
