According to EL34 spec for 55 watts output using 400 volts plate & 425 volts screen, 3.4K ohm PP is the specification for PP AB operation.I have also noticed 'unloading' power tubes produces better sonics. So, I would use a transformer around 5K ohm plate to plate in the above voltages & loss a few watts in a home entertainment amp.
For a guitar amp. the 3.5K ohm plate to plate is ok.
