1) It's easy enough in your case, because the load impedance required for triode mode is about the same as for UL mode (5k to 7k P-P, it's not critical). Just disconnect the screen (g2) of each tube from the UL tap and connect it to the plate, using a resistor of around 100 to 330 ohms. Make sure the resistor is very closely soldered to the g2 pin, so it can combat parasitic oscillations.2) EL34 sounds OK in triode mode but usually lacks a bit of "punch" in the bass and is less "bright" in the treble. Some say it sounds more mellow. It's easy enough to try it and see if you like it.
3) Maximum power in triode mode is about 1/2 the maximum power in UL mode. You may not notice much difference, unless you're used to playing at high volume. Don't forget, the ear's sensitivity is logarithmic, so to sound half as loud means 1/10 of the power.
