You will probably have some microphonics problems - I found the 30 less trouble than the 31, though others have found the other way round. I slightly prefer the 30 for its airy treble but the 31 is a handy choice for its lower plate resistance if that is needed. The 26 is a fatter, warmer sound - many prefer it, others like the 30 and 31 which are thinner. Probably 30/31 = 2a3 and 26 = 300b tone wise.
You may get addicted once you have this up and running. I used a couple of bench DC supplies so I could try out all sorts of different tubes with the same base - you could do the same during your 'experimentation' phase, particularly if you have mates that can bring round DHTs. Just dial in the filament voltage. I used some CMCs on the end of the DC supply which smoothed the sound. Examples (different current ratings):
