It's not the typical settling times published, typically at 0.1%, or sometimes 0.01% levels of accuracy, but the settling time to a much greater level of accuracy, such as 0.001% that really makes a difference sonically. Some IC's fail to reach 0.001% within any length of time, the basic accuracy is just not there.Keep in mind that 0.1% is just -60 dB, .01% is -80 dB, and 0.001% is -100 dB.
How fast does it need to be? For the more accurate 0.001% level, it seems that you need settling within a few uS, if you can do better than 1 uS (1000 nS), then the IC can not be distinguished on transients or complex waveforms.
Of course, front end aspects, noise, loading, capacitive drive capability, and other factors come into play as well, but I am assuming that all is well with these parameters.
