The shielding principle that you stated refers to shielded single conductor, not shielded twisted pair. The most common practice for wiring shielded twisted pair in an unbalanced configuration is to use one of the twisted pair for signal, the other for ground, and the shield is connected to the ground at one end only.Additionally, that principle does not apply to differential-mode transmission where common-mode rejection is relied upon to cancel EMI and lifting the shield at one end is actually a very good idea for eliminating inter-chassis currents.
