I would use 2 omnis on the wings over the choir or just in front, an xy pair in the room, and a spot mic for soloists which I would hope not to actually need. Get a good preamp like a true systems and go to a multitrack. Have it mixed later. 12 mics is waaaay too many and youll just need a little compression on the mix. This is all just my opinion but I have done classical recording for a long time. You may be able to rent all of this but should be able to look in the phone book or check with a local music school to see which professional they use.
