I'm somewhat not surprised that Windows 11 is simpler and just works and has more options. Apple is a fixed system with mostly, it's own software which is quite good, but not a tweaker like system.
Windows 10 is decent, but the odd numbers are usually the fixes and better than the evens. Likewise, Windows 7 was the nest they'd done up to that time.
Linux is another animal. Great for servers. I used FreeBSD for a long time and it's rock solid. Drivers might not be as great as Windows, but usually recognizes most older hardware.
Using any of them as a server is the same as far as I believe and use a RPi for the streamer.
