USB sound devices are detected automagically by Windoze, and should override whatever was being used for sound before.

Soundblaster Lives and Audigy PCI cards have S/PDIF outputs (1/8"), if you're going with an outboard DAC or digital surround receiver. The Audigy or Live may be good enough for analog outs; RightMark can generate some impressively low noise and distortion benchmarks for the Audigy.

I suspect that most S/PDIF output cards will sound the same; if they're capable of sending out Dolby Digital or DTS, then that means they can't go messing with the bits in any way. Using the right drivers and player will make more of a difference.
