WARNING! iTunes 7 artwork looks like crap

I haven't been using the automatic download function because I don't want to open an iTunes account so I copy and paste images in manually. No matter what resolution I paste iTunes turns it into a very low resolution image that looks like crap if it's more than a few inches square. Stuff that I put in before I upgraded (if you want to call it that) look good.
I can't find any settings that affect this so I assume Apple has decided we want things to be fuzzy. Anybody found a way around this?
How can I go back to my previous version?
