Might want to partition your 1TB into 2 x 500GB partitions and just transfer the files over. If you want to get fancy, there are all sorts of backup utilities (maybe the one that came with your HDs) that will ensure that backups copy only modified/new data onto your 1TB drive.
Plenty of options!
