Hi Mac guy here - since the beginning of time =)Obviously I think you are on a fine path - you will like the Macs and you will like iTunes as an environment in which to RIP, manage and play your tunes.
So on to the tech stuff you had questions about....
Firewire 400/800 will run 30'. Check the Granite Digital website for the good stuff and some little hubs that may let you extend past that.
USB2 will run 15'. After that there are repeaters. Also, newly discovered here on AA a bit back, is a fiber optic based USB cabling technology that while spendy will let you run up to 150 feet. The few people who have tried it are beyond satisfied with the sound - the most obsessive of us will probably think of it as a tweak soon LOL
