Which version of the Live!? Is it the 24bit or one of the others? If it reaslly is electrical S/PDIF then you need a mono miniplug to TCA JACK adapter which is 75 ohms. Theats a really unusual part (especially since it doesn't exist, you can't do that and preserve 75 ohms) so your best bet is to go to Radia Shack and get a mono mini plug to female RCA jack adapter and then plug in a real 75 ohm digital cable.Using your stereo mini plug to dual RCA might work, but its not optimal by a long shot. One plug should work, you should get nothing out of the other. Unless creative used a stereo jack and put the same S/PDIF stream on both connections.
Putting S/PDIF on a mini jack in the first place is a very bad thing to do, you are not going to be able to get really good sound out of that no mattrer what you do.
