I think that I would stick with the same brands. Each brand has it's own sound. If you have a little more gain on one channel use your balance adjustment as it is not in the signal path. Then look around and see if you can buy some more tubes that you can match up within the same brands.
IMHO, there are not any current production 6SN7's that even come close in quality to the NOS tubes from the 1940's to 1960's. If you are handy with a soldering iron you might consider changing to 12 volt filaments so you could use 12SN7's. They are alot cheaper than 6SN7's. Or see if Ralph would change your filament voltage for you.
As far as tube matching is concerned--try to match up tubes based on the plate current not the GM. As long as you can get them to match within 5%, you will be OK. If the the gain on one channel is a litle higher then use your balance control. That's why Ralph put it there.
