Just how long does it take for your bias and offset to stabilize? How are you measuring your bias and offset. I seriously doubt your new pots are the source of your problems. There are simply no thermal stability problems associated with parts like these.Again, the rectangular pots are available from Mouser Electronics. The ship all over the world.
