It's a shame you don't have the 1 ohm resistors installed. That precludes my favorite method.

There's an article about 6AS7s you can find at http://www.condor-connection.org/asog/faq/6as7g/index.html I think it will answer most of your 6AS7 testing questions. This article assumes you have either the 1 ohm resistors or just about any tube tester available.

There's still another method that many do very well. I must confess I'm not too successful with this technique. Carefully examine the connections between the tube's elements and the wires going to the sockets. They should be intact. If you examine a good tube, you should be able to see the links I'm talking about. When a 6AS7 fails, the most common failure mode is the destruction of these connections between the tube's elements and the tube socket wires.

If you want to test 6SN7s, you'll need a decent transconductance tester. There are many to choose from. My all time favorite is still the good old TV-7. They show up on Ebay form time to time at http://search.ebay.com/search/search.dll?MfcISAPICommand=GetResult&ht=1&SortProperty=MetaEndSort&query=tv-7 They are a real workhorse and they will test both 6AS7s and 6SN7s.
