Grid resistors here are also known as grid stopping
resistors. They are useful for stopping unwanted
high frequency oscillation caused by capacitance
and inductance in the grid circuit - plate feeds
back some energy to the grid via capacitance, and
some stray inductance can cause an oscillation,
usually intermittently as certain operating points
are passed through. I have had intermittent
oscillation when I first got my amp, no grid stopping
resistors in there. You have to do every triode
grid because each one forms a potential oscillator.

I fixed my oscillation problem by routing the
grid wires just right and haven't had trouble
since, but it's good practice to have them.

The quality of grid stopping resistors is not
really critical because it does little in the
circuit except at those special moments in time.
I would not add cost to the amp by upgrading these.
