No idea. I gave away the Mac when I got frustrated with all that floppy disc swapping. Possibly they've improved since then, but I digress.
If you were to acquire a PC from a thrift store that has a DVD reader, it might open up more possibilities at negligible cost. There appears to be something called DVD-Audio Explorer which can extract the audio to unmolested wav files. (Or maybe you can run it under some Windoze emulator?)
A google search found some folks complaining that Apple TV won't do 24/96 over S/PDIF. So you're probably limited to 16/44 or 16/48 PCM or (horrors) lossy DD or DTS. (Although maximum-legal-bitrate DTS at 1,536 kbit/s may be considerably better than nothing for surround program material.)
For full res playback, install some sound card that has S/PDIF out (if the computer doesn't have adequate on-board S/PDIF). Creative Audigy 2 or newer PCI cards should certainly do 24/96, and possibly 24/192. These may work on the fruit if it accepts PCI cards and appropriate drivers.
If your DAC (or receiver or processor) supports HDMI 1.3 for high-res surround sources, a newish PC would be necessary, fitted with a video card (or onboard video) that supports multichannel lossless over HDMI.
