Don't worry too much about the external audio devices too much.
These are fairly cheap and some offer fairly good audio performance.Just don't skimp on pc/laptop performance. Spend the money on performance as you need a high data throughput capability.
If you upgrade to multichannel recording later and the laptop performance isn't up to it then you need to buy another laptop again.
Upgrading memory and/or harddrive later is far less expensive.Or if it's just 2 channel for the time being you can probably have a laptop on loan that will do the job. Any laptop with firewire or USB2.0 interface will suffice.
