As Al said those are output transformers.

Basic tube amplifier designs use output transformers because tubes are voltage amplifiers and speakers are current driven devices.

In this case the transformer "transforms" the high voltage/low current output of the tubes into low(er) voltage/high(er) current to drive the speakers.
