Suggestions for a Sherwood 5500II..

I've just received a Sherwood 5500II back from my tech who replaced the volume pot with a "near" equivalent, as we could not find another original one. I am somewhat crestfallen after hearing the amp (really for the first time since buying it on ebay) on two counts for which I am hoping my esteemed fellow inmates might have some suggestions.

1) The new Volume pot has a weird volume curve now so that the volume comes up very slow, then very fast at the 11 o'clock position. Anyone know where I might find an original or better replacement. Is it the same as on the 5500I ?

2) The sound, while full, has a little too much midrange and not enough air or refinement. I think it needs new caps and I'm wondering if anyone has experience with this model and suggestions as to what caps should be replaced and which would be a good choice. Is it overkill to use something like Mundorf caps?

Is it true that the disc shaped caps are generally ok to leave in as long as they function in spec? In restoring an Eico HF81 recently, it was important to leave those in as they were characteristic of the sound of that amp. And that piece sounds wonderful now!
