First of all, the 12AX7, ECC83 and ECC803 have basically the same specifications, so substituting one for the other should have NO effect on the gain. Second, even if one has 10% higher gain, that amounts to less than one dB difference which is practically inaudible. Third, if your amp uses overall loop feedback, that will stabilize the gain and substituting tubes won't change the gain.
