I can't think of anything that would have this effect on the phono stage gain (at the lower left on the schematic below) when you change impedance, apart from an intermittent contact on the phono input itself: if you introduce series resistance at the input, then increasing the loading (decreasing the impedance) will change the gain.I would suggest you clean the phono sockets and then check the connections to the phono input.
