Almost any amp that uses the EL84 sounds good.Why do you think you have a weak tube? Even if you do, all the tubes in the amp can be had cheaply, even for good tubes. If you do need new tubes, go with modern, cheap tubes out of eastern Europe.
A more pressing concern with vintage amps is capacitors. You should get the electrolytic capacitors replaced as soon as you can. That's a safety issue. Old 'lytics fail short, the leak, and occasionally they explode.
When you can, you'll want to upgrade the other capacitors, and some of the resistors.
As to tube matching, tubes don't all come out the same. There's a certain tolerance when they're manufactured. "Matching" means putting two tubes together in a pair that test very close to each other. In your amp, you would want to match tubes to each other in each channel, or side, of the amplifier. So the two output tubes in the left channel should match each other, and the tubes in the right channel should match each other. This will limit distortion. Matching the two channels to each other is much less important.
