If anything, it is a bit rolled off on top with slightly rounded mids. If Amperex Holland sounds edgy to you, then it's probably something else in the system/amp, maybe even other tubes.The only tube that will be even more forgiving than Amperex is Mullard Blackburn, but in most applications I find it too laid back.
Ei EL84 is very good tube with fairly neutral, even balance, that's a bit more musical than sovtek. It's worth checking out.
Some people swear by Telefunkens, and Ei is in fact a Telefunken clone. I have some Telefunkens coming to me in the mail, so we'll see.
