As tubes start to break down, the grid alignment gets messed up and does not control the current as well. This leads to excess current draw and the red plates you see.Before you replace the tubes make sure that the bias mechanism is functioning properly. You might also be losing a coupling cap which could pass positive DC to the grid.
When you install the tubes, monitor the current draw to make sure your amp does not have other problems.
Fans will do little help unless you are keeping the amp in a shoe box.
