If you know what instrument these came from, I may be able to find specifications. Otherwise, identify windings with an ohmeter - center-tapped winding with highest resistance is high voltage, two windings with equal resistance are 120V primaries - in series for 240V.
Measure unloaded voltages and you can use PSU Designer from duncanamps.com to see what the voltage will be. Current capacity can be estimated from winding resistance - article below.http://www.audiophool.cjb.net/Misc/XFMR1.JPG
