Again, I don't know what happened to the original post.
My friends, including Kim, took advantage of my college apartment having a gas stove. Since she knew I had three housemates, Kim could take advantage of economy of scale, and make pho for a handful of people. She bought/provided the rice noodles, peppers, onions, limes, garlic, fish sauce, beef bones (to make the broth), bean sprouts, and basil. She had her girlfriends bring the meats and seafood.
Kim, who was born in HCMC (formerly Saigon), explained how pho differed from Chinese soup noodles.
Tuyet, who was born in Hanoi, then explained how northern Vietnamese (wider noodles, less garnishes) differed from Kim's southern-style pho.
I wish we had more photos from the 1990s. Kim's freinds had a karaoke machine. I have no idea where they got it and the discs. But via the karaoke machine's line outs, we were able to hook it up to my housemate's Denon integrated amp. This was one link, where everyone felt that the AudioQuest Topaz let through more of the signal, than the Monster IL-400.
With so much going on, you can see why guests often stayed for hours on end.
