I'm certainly no expert, but with the separate ground, the XLR should be quieter. I've found this to be true in my own system when I've had the option to go balanced. That's also what is recommended in the books and articles I've read. IMHO, if the cost is either the same or it is of minimal difference and you can use balanced, I would go that way.
